The acute effects of dietary monounsaturated fat on arterial stiffness

Summary:

Many changes occur within hours of consumption of a meal and humans are repeatedly exposed to these changes in a day. The extent and kinetics of such changes are modulated by a number of factors including the composition of the meal. Humans spend a considerable amount of any 24 hour period in the post-meal state due to the frequency of eating. It is important therefore to understand these acute changes (i.e. 0-4 hours after a meal is consumed) with respect to the effect that they may have on the risk for developing cardiovascular disease.
